Easy Vegetable Soup

Who doesn’t like potatoes? Exactly. No-one. This easy and super delicious creamy vegetable soup is not only packed with nutritious ingredients and vitamins we all so desperately need this spring but also requires absolutely no cooking skills and only 30 minutes to make. 


  • 4-5 medium-sized potatoes (about 1 kg.)
  • 2 long carrots 
  • 2 medium-sized onions
  • 1 garlic head 
  • 4 tablespoons unsalted butter
  • Spices: salt, red pepper, black pepper, or any to taste

How to make it

Step 1:

Cut onions into medium-sized cubes and finely chop garlic. Melt the butter in a small pan over medium heat. Add spices until incorporated. Add onions and garlic and saute until soft and covered in spices. Set aside. 

Step 2:

Peel the potatoes and carrots then cut into cubes. Add to a large saucepan with 1,5 l of water. Boil until soft. 

Step 3:

When potatoes and carrots become soft, add the onion and garlic mixture into the saucepan and let it cook for 5 more minutes. Stir occasionally. Take off of the heat and let cool until room temperature. 

Step 4:

Transfer into a food processor or use a blender to blend until creamy consistency. Serve with chips or tomatoes as a topping.
